going with pancake lost in translation to blini.
if you have not done blini (easteuro crepe fill it with whatever you want, fish, beef, pork, goat, cocaine)

Have a food truck down the block from my office that does fantastic blini. They make a filling out of crushed peas and mint with feta. OMG.

I had the best dessert ever recently in buenos Aires which was a crepe filled with dulce de leche. They even hit the outside with a torch to caremlize some of the leche to give it a creme brûlée crunch. Amazing.
